Chicken continues to be one of the less expensive meats at the grocery, and this makes us think seriously about trying more of those recipes.

I’ve always said there are more ways to cook chicken than we can count, and my goal is to find as many of the simple and delicious recipes I can to pass along!

These three I am featuring this week are all winners in my book, and my photographer, Bob Crisp, was also impressed with them.

The Chicken Breast Stuffed with Spinach and Mushrooms is a creation of my granddaughter, Emily. This young lady is becoming quite a cook, and is very interested in creating some dishes of her own! Needless to say I am very proud of her!

The recipe for Chicken Ala King Cups featured calls for twelve canned biscuits. I bought a can with ten in it and a smaller can of five. After I prepared my twelve cups in the muffin pan, I baked the last three biscuits in a small baking dish, and served them on the side. We also enjoyed baby carrots that had been boiled, drained and dressed in brown sugar and a little butter with the chicken dishes.

Another delicious side dish is spaghetti, seasoned with a little olive oil, Parmesan cheese and dried parsley.



Chicken a la King Cups

12 canned biscuits, (regular kind)

2 cups chicken (cooked and deboned)

2 cups sweet peas and carrots

1 can cream of cream of chicken soup

½ cup chicken broth

3 T. butter or margarine

1 t. black pepper

½ t. Salt





Grease muffin pan. Open canned biscuits and roll each biscuit into a thin, round circle. Place in muffin tin, and use your fingers to place and press the dough down. In a large mixing bowl, combine the rest of the ingredients, mixing well. Fill each dough covered muffin tin with the mixture.

Place the muffin pan in a preheated 350 degree oven and bake until biscuits are re golden brown, about 25 minutes. Serves 6.






Parmesan Crusted Chicken



4 Boneless, skinless chicken breasts

½ cup Mayonnaise

½ cup Parmesan Cheese

¼ cup sour cream

Italian Bread Crumbs

8 Slices Provolone Cheese

Salt and Pepper to taste



Preheat oven to 375. Cut chicken breasts in half and salt and pepper to taste. Place chicken in baking dish. In a bowl combine mayonnaise, parmesan cheese and sour cream mix well. Spoon mixture over top of the chicken until well coated. Cover the coated chicken with bread crumbs. Bakeat 375 for approximately 35 minutes, pull dish out and place one slice of provolone cheese on top of each piece of chicken. Return dish to oven and continue to bake for another 10 minutes or until cheese is completely melted.






Spinach and Mushroom Stuffed Chicken





4 Boneless, skinless chicken breasts

1 cup Mozzarella Cheese

1 can sliced mushrooms, drained

Bag of fresh baby spinach leaves

2 teaspoons minced garlic

½ cup olive oil

Italian Bread Crumbs

Salt and Pepper to taste

Approximately 12 Toothpicks



Preheat oven to 375. With a meat tenderizer, the smooth side, pound chicken out until it is about ½ inch thick. Be careful not to tear. In a sauce pan heat ¼ cup of the olive oil and garlic until hot. Place mushrooms and about four good handfuls of spinach into pan with olive oil and garlic. Toss in pan until spinach has cooked down, and then remove from heat. Distribute Mozzarella cheese over the top of the beaten chicken breasts. Spoon and evenly distribute the spinach and mushroom mixture over top of the mozzarella cheese. Start with one edge of the chicken breast and carefully roll it up so the cheese and spinach mixture is securely inside; hold in place with toothpicks. Repeat with remaining three chicken breasts. Pour remaining olive oil in the bottom of baking dish. Carefully place stuffed chicken in baking dish. Coat top of chicken breast with Italian bread crumbs. Place in preheated oven and bake for approximately 45-60 minutes or until chicken is done.
